Heat oil and garlic on medium level in a pan for about 2 minutes. Add green bell pepper strips and stir fry on high heat for a few seconds.

  • Cottage Cheese cut into 1/2" cubes 200 grams
  • Green Bell Peppers cut into long thin strips 2
  • Garlic Crushed 4 flakes
  • Oil 2 tbsp
  • Red Chilli 1 tsp
  • Coriander and hot spice mix Garam Masala powder
  • Tomato Puree 8 tbsp
  • Salt to taste
  • Sugar to taste
2   COOKING DIRECTIONS
  1. Heat oil and garlic on medium level in a pan for about 2 minutes.
  2. Add green bell pepper strips and stir fry on high heat for a few seconds.
  3. Add red chilli powder, coriander powder, garam masala (optional) powder, tomato puree, salt and sugar.
  4. Mix well. Cook on medium heat uncovered for about 3 minutes.
  5. Add cottage cheese. Mix well and keep aside.
  6. Just before serving, heat on medium level covered for 3 minutes.

  • Potatoes Potato covering 1/2 kilo

  • Cheese (optional) 2 tbsp
  • Egg 1
  • Salt 1/2 tsp
  • Pepper Chutney 1/2 tsp
  • Grated Coconut 1 cup
  • Ginger 1/2 cube
  • Jeera 1/2 tsp
  • Tamarind (Marble Size) 1 lump
  • Green Chillies 4
  • Garlic (Optional) 1-2 cloves
  • Salt 1/2 tsp
2   COOKING DIRECTIONS
  1. Boil and mash the potatoes without any lumps.
  2. Add the egg yolk, flour, cheese and seasonings and knead well.
  3. Grind the chutney and keep it aside.
  4. Roll the potatoes mixture into balls, the size of large marble.
  5. Hollow them and insert a small lump of chutney and close.
  6. Roll each ball in lightly beaten egg white.
  7. Deep fry in very hot oil until golden brown.
  8. Drain off oil and serve hot.

  • Onions 6 large
  • Maida 2 cups
  • Cornflour 3 tbsp
  • Salt to taste
  • White Pepper Powder 1/2 tsp
  • Baking Powder 1/2 tsp
  • Oil for frying 1/2 cup
2   COOKING DIRECTIONS
  1. Cut the onions into thick round slices.
  2. Separate the slices into rings and select only the large outer rings.
  3. Sift together refined flour, cornflour, salt, white pepper powder and baking powder.
  4. Gradually stir in half a cup of oil and one-and-a-qaurter cups of water to make a thick batter.
  5. Whisk the batter continuously for about five to ten minutes.
  6. Heat oil in a kadai.
  7. Dip onion rings in the batter and deep-fry till crisp.
  8. Drain on absorbent paper and serve hot.

  4. Place the mixture in a baking tray and into a moderately hot oven for 30 min.

1   INGREDIENTS
  • Mutton leg(Raan) 1
  • Yogurt 250 gms
  • Milk 1/2 cup
  • Saffron 1/2 tsp
  • Oil 4 Tbsp
  • Mixed hot spice(Garam Masala)1 tsp
  • Salt to taste
  • Ginger 2 inch piece(finely chopped)
  • Garlic 6 cloves(finely chopped)
  • Crushed chillie flakes 1 Tbsp or to taste
  • roasted cumin seed 1 tsp (grinded with knife)
  • onion whole 1
  • green chillies 5-6
  • spring onion 2

2   COOKING DIRECTIONS
  1. Warm half cup milk in pan and add saffron in it stir well.
  2. Take raan ,make cut mark on both sides with the help of knife and rub mixed hot spice (Garam Masala) on both sides and leave for 10 min
  3. Take a bowl add Yogurt, Salt, Ginger, Garlic, Oil, diluted Saffron (from step 1), Red Chille flakes, Grounded Cumin and mix
  4. Pour the solution from step above on Mutton Leg and rub well. Leave it for another 15 min
  5. Put the Mutton Leg in baking tray and just place onion,spring onion and green chillies on top and now put in oven 180 degree for 12 min Change the side of Mutton Leg and let it bak for another 12 min 
  6. After 12 minutes take the leg out and pour all juices from the baking tray to another pan and put the Leg in a serving plate.

  7. Garnish
  8. Strain out Blend the Onion, Green Chillies and Spring Onion in a blender.
  9. Add the blended Onion, Green Chillies and Spring Onion back to the Juices and put it to Bake until it turns into a thick suace
  10. Once ready pour this sauce on the Mutton Leg
  11. It's ready to be served

  3. Add spices u will add water gradually while mixing everything up coz in this way the pakora mixture will be uniform,
  4. Heat the oil in pan on high heat turn down the heat down once oil is heated
  5. Start frying pakoras in the pan, shallow fry them
  6. Turn them once reached half way through fying
  7. Take them out in a tray or platter once they turn to disired color (near Dark Brown) and serve them with chillie and mint sauce.

Soak the dalia in two cups of water for thirty minutes. Drain. Heat the oil in a pressure cooker and add the cumin seeds.

  • Shelled green peas 1/2 cup
  • Small carrots, diced 2
  • Oil 1 tbsp
  • Cumin seeds 1 tbsp

  • Butter 2 tbsp
  • Fresh coriander leaves 2 tbsp
2   COOKING DIRECTIONS
  1. Soak the dalia in two cups of water for thirty minutes.
  2. Drain. Heat the oil in a pressure cooker and add the cumin seeds.
  3. As they begin to change colour, add the onion and saute till pink, add the green peas, carrots and tomato and saute for one minute.
  4. Add the dalia and three cups of water, add salt to taste.
  5. Bring the mixture to a boil, fasten the lid of the pressure cooker and cook till the pressure is released twice (two whistles).
  6. Stir in the butter and coriander leaves and serve at once

  • Aniseed (saunf) powder 2 tsp
  • Asafoetida (hing) a pinch
  • Salt to taste
  • Black cardamom(crushed) 2
  • Yoghurt (dahi) 2 tbsp
  • Milk 3 tbsp
  • Ghee 2 tbsp
  • Cloves (hung), crushed 3
  • Green cardamom(crushed) 3
  • Green chillies(sliced) 2
2   COOKING DIRECTIONS
  1. Cut the cottage cheese into 1 1/2 x 2 inch x 1/2 inch pieces.
  2. Heat the oil in a pan, fry the cottage cheese until golden at the edges.
  3. Transfer to a pot with water.
  4. Fry the potatoes and keep them aside.
  5. Heat the pot with the cottage cheese and water, increase heat.
  6. Add turmeric, ginger and aniseed powders, asafoetida, salt, black cardamom, and potatoes.
  7. Cook until the gravy is reduced to half.
  8. Add the yoghurt and milk (whisked together).
  9. Bring to the boil, stirring constantly for 5 minutes, then remove from heat.
  10. Heat the ghee in a pan, saute the cloves and green cardamom.
  11. Add to the mixture and serve garnished with green chillies

  4. Heat the oil (5 tbsp) in a heavy-bottomed pan.

  6. Stir briskly till it takes a nice red colour, without letting it stick to the bottom.
  7. Add water, stir well and then add all the spices bring to a boil.
  8. Add the fried potatoes and cook over a low flame for 15 minutes.
  9. Stir occasionallly to prevent it from sticking to the bottom.
  10. Cook until the liquid is almost dry and the oil separates.
  11. Remove from flame and serve hot.

  3. Cook, stirring occasionally, till the liquid dries and the oil separates.
  4. Mix the red chilli powder in a little water and add to the liver.
  5. Stir for a few seconds, then add the remaining water and bring to the boil.
  6. Put in the ginger powder, aniseed powder, and green chillies.
  7. Cook till the gravy thickens a little. Serve hot.

  • Water 1/2 cup
2   COOKING DIRECTIONS
  1. Wash and cut the turnips into thick, wafer-like slices.
  2. Heat the oil in a heavy-bottomed pot, add turnips, asafoetida, sugar, and salt.
  3. Add dry red chillies and stir well.
  4. Cover the pot and cook on high heat for 5 minutes, stirring often to make sure that it does not stick to the bottom of the pot.
  5. Add tikka masala and water, stir well.
  6. Lightly mash the turnips with the back of the ladle, while stirring.
  7. Cook till the liquid almost dries up.
  8. Serve hot, accompanied with rice and plain yoghurt.

Scrape the lotus stems and cut off the ends. Wash thoroughly under running water, ensuring that no mud remains in the stems.

1   INGREDIENTS
  • Lotus stems(kaml kakri) 500 g
  • Refined flour (maida) 1/2 cup
  • Soda bicarbonate a pinch
  • Red chilli powder 1 tsp
  • Salt to taste
  • Water 1/2 cup
  • Drops Red colour 1/2 cup
  • Vegetable oil for fry 1 cup
2   COOKING DIRECTIONS
  1. Scrape the lotus stems and cut off the ends.
  2. Wash thoroughly under running water, ensuring that no mud remains in the stems.
  3. Cut the stems into 3 inch pieces and then slice each piece into 4 - 6 fingers.
  4. Wash well again.
  5. In a big bowl, mix flour, soda bicarbonate, red chilli powder, salt, and enough water to make a batter of dropping consistency.
  6. Mix in the red colour.
  7. Heat the oil in a deep pan, dip lotus stems into the batter and then deep-fry until golden in colour.
  8. Remove with a slotted spoon and drain the excess oil on absorbent kitchen towels.
  9. Serve hot as a snack or as an accompaniment.

Boil enough water in a small pan to cover chicken liver. Add chicken liver, turn off heat, leave liver in water for 5 minutes, then drain.

1   INGREDIENTS
  • Chicken liver (12-14) 450 g
  • Butter 200 g
  • Garlic cloves 2-3
  • All spice powder 1/2 tsp
  • Cream or thick malai 200 g
  • Mixed herbs (basil) 1 tsp
  • Salt, pepper to taste
2   COOKING DIRECTIONS
  1. Boil enough water in a small pan to cover chicken liver.
  2. Add chicken liver, turn off heat, leave liver in water for 5 minutes, then drain.
  3. Fry liver in 100 g melted butter together with garlic slivers. Remove from heat.
  4. Mix all spice powder, herbs, salt and pepper and add to the chicken liver.
  5. Mix together in a blender, add the cream last, and blend till combined thoroughly.
  6. Melt remaining butter, put into mold, spoon in liver mixture carefully, so as not to disturb butter too much.
  7. Cover with aluminum foil and freeze for 4 to 5 hours or till frozen.
  8. Take out pate 1/2 to 1 hour before serving.
  9. To unmold slide a knife between pate and mold to loosen sides and invert mold onto serving dish.
  10. Serve with melba toast.

1   INGREDIENTS
  • Chicken :cubes cut into a centimeter cube pieces 400 grams
  • Spring onions: a whole bunch finely chopped
  • Soya sauce: 2 table spoon or more to taste
  • Black pepper: one tea spoon
  • Chili flakes: one table spoon
  • Red chili powder: half tea spoon
  • Green coriander leaves: one bunch (hand full) finely chopped
  • Readymade pastry for spring rolls
  • Oil:
  • Salt: to taste(not more because it’s got soy sauce already in it
  • Oil for deep frying : one liter

2   COOKING DIRECTIONS
  1. Heat the oil in the pan and when its heated put the chicken cubes into it
  2. fry it for 5 minutes then put soy sauce, salt, black pepper, red chili flakes, red chili powder.
  3. Now cook it for 15 Min.
  4. after its cooked remove it from the wok and let it get cool
  5. now add the finely chopped spring onion and the coriander, mix it well and fill it into the pastry to make spring rolls and deep fry them on high heat for 3 to 5 minutes

  • Thyme powder 1/4tsp

  • FOR TOPPING:
  • Tomato 2 (cut into square)
  • Lemon 1(slices)
  • Onion 1 (chopped)
  • Capcicum 2(cut into square)
  • Mozzarella cheese 1pkt (shredded)
  • Chedder cheese 1pkt(shredded)
2   COOKING DIRECTIONS
  1. Pizza Doug:
  2. Add all ingredients (don't dissolve yeast in water as its instant yeast)knead with lukewarm milk or water don't knead with fist even rub with palm till sugar disolve When dough become in smooth form cover it with polythene bag set a side till 1hour.
  3. Pizza Sauce:
  4. Heat oil fry garlic add rest of all ingredients cook for 2 mins then add 2 tbsp water cook more 2mins
  5. Remove from heat let it cool.
  6. Pizza Filling:
  7. Mix all ingredients in chicken marinate for 1 hour bake at mark 4 or 180 degree for 40-45 mins.
  8. Steam with coal.
  9. When dough rise well take half of dough spread on 12'' pizza pan mark with fork now spread 3tbsp prepared sauce,spread baked chicken (make tiny pieces) sprinkle black pepper spread onion,tomatoes,capsicum.lemon slice sprinkle black pepper and shredded cheese.
  10. Bake for 10-15min at mark 2. (pre_heat oven on mark 2 for 15-20 mins)
  11. Serve Hot with salad and sauces.

1   INGREDIENTS
  • SPONGE:
  • 110g/4oz butter or margarine
  • 110g/4oz caster sugar
  • 2 medium eggs
  • 110g/4oz self raising flour

  • FILLING:
  • Fresh cream as required
  • Strawberry jam as required
2   COOKING DIRECTIONS
  1. Heat the oven to 180C/350F/GAS 4.
  2. Line 2*18cm/7in cake tins with baking parchment.
  3. Use a hand mixer to cream the butter and the sugar together untill pale.
  4. Beat in the eggs
  5. Sift over the flour and fold in using a large metal spoon. the mixture should be of a dropping consistency if it isn't, than add a little milk.
  6. Divide the mixture between the cake tins and gently spread out with a spatula.
  7. Bake for 20-25 minutes until an inserted skewer comes out clean.
  8. Allow to stand for 5 minutes before turning on to a wire rack to cool.
  9. Now whip the cream until thick and use it to fill the sponge with the jam.
  10. Dust some icing sugar on top of the cake and serve.

  • Water 7 cups

  • Sweet Tamarind sauce (Methi Imli ki Chutney)

  • Cumin (zeera) 1/4 tsp
  • Water 3 cups

  • FILLINGS:
  • Chick peas 1 cup boiled

2   COOKING DIRECTIONS
  1. GOL GAPPAY: Take bowl add flour, wheat flour, suji, salt 2 pinches, oil and add very little water at time cause we have to knead it as hard dough wrap it with cling film and refrigerate it for 1 to 1 1/2 hrs
  2. Now make small balls and roll it with the help of rolling pin very thinly cut rounds with cutter and deep fry them in medium heated oil as u put oil on them while frying they will get puffed up.
  3. Khatta Imli ka pani: Add all things in a large pan and put it on stove give one boil and cook for 5 min, it is ready
  4. Methi imli ki chutney:  add all things in pan cook till slightly thick not like paste.
  5. PRESENTATION:  serve Gol gappay with chick peas, potatoes and with the sauces

1   INGREDIENTS
  • 10-12 bhindi or landyfingers.(slit 1 bhindi in 2 parts vertically)
  • 1tbsp vinegar
  • 1tsp crushed red chilly flakes
  • 1 tsp powdered red chilly (if u like spicy food)
  • 1tsp turmeric
  • 1 tsp corriander powder
  • 1 tsp chat masala
  • 1 cup gram flour
  • 1 tbsp cooking oil for flour
  • cooking oil for frying
  • corriander leaves
  • mint leaves
  • salt to taste
2   COOKING DIRECTIONS
  1. Take ladyfinger pieces in a bowl and marinate it with red chilly,salt,turmeric,vinegar,corriander powder and chat masala.
  2. Keep it aside for atleast 10 minutes take gram flour and add salt with 1 tsp of red chilly and 1 tsp of turmeric in it with 1 tbsp oil.add chopped corriander leaves and mint leaves in it and mixx well
  3. Add water to make batter but batter should be little thick for nice coating.
  4. Heat oil in pan and coat bhindis with this batter and deep fry.
  5. First keep the flame high and then turn it little slow so that the ladyfingers get softened and then again fry it on high flame
  6. Yummy bhindi pakoras are ready

  3. Microwave at high power for 1 minute.
  4. Mix remaining ingredients except parmesan cheese, pour over veal chops.
  5. Microwave at medium high until veal chops are tender, 6 to 9 minutes.
  6. Sprinkle veal chops with cheese.

  • chilkoon wali maash ki dal 1 cup soaked and boiled

  1. Dough: take a bowl add flour, oil, yogurt, very little salt and add water slowly to knead and leave for 5 min
  2. COATING: take a bowl add besan, red color, red chili powder again very little amount of salt and add water to make a semi thick paste. ASSEMBLING: make a ball from dough and roll it just like a chappati now make marks with the help of fork or knife so that oil can pass through from it
  3. Now coat it with the besan paste now sprinkle whole coriander seeds and than sprinkle chilkoon wali mash ki daal boiled
  4. With very care put the non coated side in the medium heated oil wait for 3-4 minutes till one side is cooked than turn the other side down and let it cook for more 5-7 min
  5. Ready to serve

  • Chicken breast mince(500 gms)
  • Chopped spinach 2-3 bunches
  • Chopped green onions 5-6

  • Chopped coriander leaves
  • Chopped green chilies to taste

  • Boiled mashed chana daal(gram pulse) 1 cup
  • 1 egg
  • Salt to taste
  • Red chilly to taste
  • Coriander powder 1-1/2 tsp
  • 1-1/2 tbsp lemon juice
  • 1 tsp garam masala
  • 1 tbsp ginger garlic paste

  1. Take chicken mince in a bowl and add the chopped spinach, green onions, mint n coriander leaves, green chilies, onion, egg, lemon juice, spices, chana daal..etc
  2. Add all the ingredients together in a bowl and mix very well and then keep aside for an hour or two
  3. Make kebabs and grill them
  4. these are chicken kebabs with a lot of veggies so very good in taste and very healthy also and they taste is really good

1   INGREDIENTS
  • 2 chicken breasts
  • 1 tbsp ginger garlic paste
  • 1 1/2 tbsp vinegar
  • 1 tbsp soya sauce
  • 1 tsp coriander powder
  • 1 tsp red chilly
  • 1 tsp turmeric
  • Salt to taste
  • Half tsp garam masala
  • 2 tbsp green chutney (green chilies, mint leaves, coriander leaves)
  • Green onions cut into 2 inch pieces
  • Steamed cauliflower
  • Green chilies 2
  • Steamed potato 1 or French fries
  • 1 capsicum cut into 2 inch thin pieces
2   COOKING DIRECTIONS
  1. Take the chicken breast and flatten it with roll pin until it’s thin
  2. Marinate these chicken breasts in vinegar, soya sauce and all spices given above
  3. For 2 hours minimum steam the cauliflower pieces and potato and if your not weight conscious then u can use French fries instead of steamed potatoes
  4. Take oil in a pan...up to 3 tbsp and fry green onions in it for a minute
  5. Add potato pieces and cauliflower pieces and chilies also cut in thin pieces and capsicum. Also add some salt and crushed black pepper and 1 tbsp vinegar
  6. Take them out before the color change of vegetables
  7. Take 1 chicken breast and place these vegetables in it vertically and then roll it pressing tightly and if needed insert a tooth pick to keep it close then shallow fry it or grill it with pill brushing...
  8. Read to serve!

  5. Add the crushed peppercorns, powdered ginger and fried broken red chillies.

1   INGREDIENTS
  • Lasagne pasta 8-10 strip
  • Beef, minced & cooked 1/2 kg
  • Onion, sliced & sauted 1
  • Mushrooms, sliced 8
  • Tomato sauce 50 ml
  • Mozzarella cheese 100 gm
  • Beef stock 225 ml
  • Butter 1 tbsp
  • Flour 1 tbsp
  • Milk 250 ml
  • Parmesan cheese 50 gm
2   COOKING DIRECTIONS
  1. Boil pasta according to package insturctions.
  2. Line a 10-inch X 9-inch ovenproof dish with a layer of pasta.
  3. Combine together mushrooms, minced meat, onions, tomato sauce or puree, mozzarella cheese and rich stock.
  4. Put half the meat mixture into the dish, cover with another layer of pasta and the remainder of milk stir till smooth.
  5. Bring to a boil, stirring constantly.
  6. Pour sauce over the lasagne, sprinkle with parmesan cheese and bake at 3/160 degree C for 45 minutes.
  7. Garnish with tomato and capsicum.
  8. Use cottage cheese instead of mozzarella cheese for a lighter lasagne.

  • Worcestershire sauce 1 tbsp
  • Maida 50 gms
  • Ginger paste 1 tsp
  • Garlic paste 1 tsp
  • Yellow colour a pich
  • Water 1/2 cup
  • Oil as required
  • Salt to taste
2   COOKING DIRECTIONS
  1. Boil the drumsticks with 1/2 cup water and 1/2 tsp salt with worcestershire sauce for 5 minutes.
  2. Remove and cool.
  3. Mix all ingredients thououghly, except drumsticks and prepare a thick batter.
  4. Heat oil in a frying pan, dip drumsticks into the thick batter and fry on medium heat to a light brown colour.
  5. Garnish and serve hot lollipops with sauce.
