Heat the oil in a pan, add cardamom seeds, cumin seeds, salt and asafoetida. Stir for 30 seconds, then add the radish.

1   INGREDIENTS
  • White radish (safed mooli), grated 2 1/2 cups
  • Oil 4 tbsp
  • Cardamom (ajwain)seeds 1/2 tsp
  • Cumin seeds (jeera) 1/2 tsp
  • Salt to taste
  • Asafoetida (hing) a pinch
  • Turmeric (haldi) powder 1/2 tsp
  • Ginger Powder (saunth) 1/2 tsp
  • Aniseed (saunf) powder 1/2 tsp
  • Red chilli powder (optional) 1/2 tsp
  • Green chilli, chopped 1
  • Juice fo lemon (nimbu) 1
  • Walnuts (akhrot), curshed 1/4 cup
2   COOKING DIRECTIONS
  1. Heat the oil in a pan, add cardamom seeds, cumin seeds, salt and asafoetida.
  2. Stir for 30 seconds, then add the radish.
  3. Cook over a medium flame till the water evaporates and the oil separates.
  4. Add turmeric, ginger, aniseed and red chilli powders, the green chilli and lemon juice.
  5. Cook for about 5 minutes, then add the walnuts.
