Heat oil and garlic on medium level in a pan for about 2 minutes. Add green bell pepper strips and stir fry on high heat for a few seconds.

1   INGREDIENTS
  • Cottage Cheese cut into 1/2" cubes 200 grams
  • Green Bell Peppers cut into long thin strips 2
  • Garlic Crushed 4 flakes
  • Oil 2 tbsp
  • Red Chilli 1 tsp
  • Coriander and hot spice mix Garam Masala powder
  • Tomato Puree 8 tbsp
  • Salt to taste
  • Sugar to taste
2   COOKING DIRECTIONS
  1. Heat oil and garlic on medium level in a pan for about 2 minutes.
  2. Add green bell pepper strips and stir fry on high heat for a few seconds.
  3. Add red chilli powder, coriander powder, garam masala (optional) powder, tomato puree, salt and sugar.
  4. Mix well. Cook on medium heat uncovered for about 3 minutes.
  5. Add cottage cheese. Mix well and keep aside.
  6. Just before serving, heat on medium level covered for 3 minutes.

1   INGREDIENTS
  • Potatoes Potato covering 1/2 kilo
  • Flour 2 tsp
  • Cheese (optional) 2 tbsp
  • Egg 1
  • Salt 1/2 tsp
  • Pepper Chutney 1/2 tsp
  • Grated Coconut 1 cup
  • Ginger 1/2 cube
  • Jeera 1/2 tsp
  • Tamarind (Marble Size) 1 lump
  • Green Chillies 4
  • Garlic (Optional) 1-2 cloves
  • Salt 1/2 tsp
2   COOKING DIRECTIONS
  1. Boil and mash the potatoes without any lumps.
  2. Add the egg yolk, flour, cheese and seasonings and knead well.
  3. Grind the chutney and keep it aside.
  4. Roll the potatoes mixture into balls, the size of large marble.
  5. Hollow them and insert a small lump of chutney and close.
  6. Roll each ball in lightly beaten egg white.
  7. Deep fry in very hot oil until golden brown.
  8. Drain off oil and serve hot.

1   INGREDIENTS
  • Onions 6 large
  • Maida 2 cups
  • Cornflour 3 tbsp
  • Salt to taste
  • White Pepper Powder 1/2 tsp
  • Baking Powder 1/2 tsp
  • Oil for frying 1/2 cup
2   COOKING DIRECTIONS
  1. Cut the onions into thick round slices.
  2. Separate the slices into rings and select only the large outer rings.
  3. Sift together refined flour, cornflour, salt, white pepper powder and baking powder.
  4. Gradually stir in half a cup of oil and one-and-a-qaurter cups of water to make a thick batter.
  5. Whisk the batter continuously for about five to ten minutes.
  6. Heat oil in a kadai.
  7. Dip onion rings in the batter and deep-fry till crisp.
  8. Drain on absorbent paper and serve hot.

  • Meat minced half kg
  • Raw popaya 2tbsp
  • Black peper 5-6
  • Black cardemon 2
  • Green cardemon 3
  • Cinnamon stick 1 small
  • Bay leaves 1
  • Cumin seed 1tbsp
  • Fennel seed(saunf)1tsp
  • Coconut(ground)2tbs
  • Nutmeg powder 1pinch
  • Mace Powder(jawatri)1pinch
  • salt to taste
  • Red chillie powder 1tsp
  • Onion 1 medium
  • Yogurt 1/2 cup
  • Ginger Garlic paste 1tbsp
  • Oil 2tbsp
2   COOKING DIRECTIONS
  1. Roast all whole spices and grind.
  2. Grind Onion and add all roasted spices along Yogurt, Red Chilies, Ginger, Garlic, Salt, Coconut, Papaya and oil in minced Meat.
  3. Marinate for 1 hour.
  4. Place the mixture in a baking tray and into a moderately hot oven for 30 min.
  5. Garnish with onion.

  6. Serve with Paratha and lemon onion salad.

Raan Roast or Mutton Leg Roast, if presented well, it would easily become the center of attraction on your serving table.

1   INGREDIENTS
  • Mutton leg(Raan) 1
  • Yogurt 250 gms
  • Milk 1/2 cup
  • Saffron 1/2 tsp
  • Oil 4 Tbsp
  • Mixed hot spice(Garam Masala)1 tsp
  • Salt to taste
  • Ginger 2 inch piece(finely chopped)
  • Garlic 6 cloves(finely chopped)
  • Crushed chillie flakes 1 Tbsp or to taste
  • roasted cumin seed 1 tsp (grinded with knife)
  • onion whole 1
  • green chillies 5-6
  • spring onion 2

2   COOKING DIRECTIONS
  1. Warm half cup milk in pan and add saffron in it stir well.
  2. Take raan ,make cut mark on both sides with the help of knife and rub mixed hot spice (Garam Masala) on both sides and leave for 10 min
  3. Take a bowl add Yogurt, Salt, Ginger, Garlic, Oil, diluted Saffron (from step 1), Red Chille flakes, Grounded Cumin and mix
  4. Pour the solution from step above on Mutton Leg and rub well. Leave it for another 15 min
  5. Put the Mutton Leg in baking tray and just place onion,spring onion and green chillies on top and now put in oven 180 degree for 12 min Change the side of Mutton Leg and let it bak for another 12 min 
  6. After 12 minutes take the leg out and pour all juices from the baking tray to another pan and put the Leg in a serving plate.

  7. Garnish
  8. Strain out Blend the Onion, Green Chillies and Spring Onion in a blender.
  9. Add the blended Onion, Green Chillies and Spring Onion back to the Juices and put it to Bake until it turns into a thick suace
  10. Once ready pour this sauce on the Mutton Leg
  11. It's ready to be served

  • CABBAGE:1 MEADIUM SIZE (THINLY SLICED)
  • SPRING ONIONS:1 CUP (FINELY CHOPPED)
  • GREEN CORIENDER: 1 CUP (FINELY CHOPPED)
  • GARLIC:1 CLOVE IF ITS FAT ONE AND 2 IF THEY ARE THIN ONES (FINELY CHOPPED)
  • GARAM FLOUR,(BESIN): 1 CUP
  • RED CHILLI FLAKES:2TABLE SPOON
  • SALT :TO TASTE
  • GARAM MASALA:1 TEA SPOON
  • RED CHILLI POWDER:1/2 TEA SPOON
  • WATER:ROUGHLY 1 CUP OR 1 AND A HALF CUP DEPENDS UPON THE QUALITY OF BESIN OR GARAM FLOUR.(LUKE WARM)
  • OIL :ONE CUP

2   COOKING DIRECTIONS
  1. Take the finely sliced cabbage and coriender finely chopped garlic and spring onions and put them into a large bowlmix them well 
  2. Add garam flour and mix it well unti there are no lumps in it
  3. Add spices u will add water gradually while mixing everything up coz in this way the pakora mixture will be uniform,
  4. Heat the oil in pan on high heat turn down the heat down once oil is heated
  5. Start frying pakoras in the pan, shallow fry them
  6. Turn them once reached half way through fying
  7. Take them out in a tray or platter once they turn to disired color (near Dark Brown) and serve them with chillie and mint sauce.

Soak the dalia in two cups of water for thirty minutes. Drain. Heat the oil in a pressure cooker and add the cumin seeds.

  • Broken wheat 1 cup
  • Shelled green peas 1/2 cup
  • Small carrots, diced 2
  • Oil 1 tbsp
  • Cumin seeds 1 tbsp
  • Small onion, chopped 1
  • Medium tomato, seeded and chopped 1
  • Butter 2 tbsp
  • Fresh coriander leaves 2 tbsp
2   COOKING DIRECTIONS
  1. Soak the dalia in two cups of water for thirty minutes.
  2. Drain. Heat the oil in a pressure cooker and add the cumin seeds.
  3. As they begin to change colour, add the onion and saute till pink, add the green peas, carrots and tomato and saute for one minute.
  4. Add the dalia and three cups of water, add salt to taste.
  5. Bring the mixture to a boil, fasten the lid of the pressure cooker and cook till the pressure is released twice (two whistles).
  6. Stir in the butter and coriander leaves and serve at once
